6 ea Tomatoes, peeled & sliced-crosswise
1/2 ea Spanish onion (or)
1 ea Red onion, sliced into thin-rings
1/4 c Olive oil
1 tb Vinegar
1 ea Garlic clove, crushed
Salt & pepper Parsley, chopped 1 pn Sweet paprika
1 pn Cumin
Combine the tomato & onion slices. Make a sauce with the remaining ingredients & pour over the tomatoes & onion.
