Dressing

* Ingredients:

2 cloves garlic
1 cup tomato juice
2 tbs. balsamic vinegar
1 tbs. extra virgin olive
oil
1 tbs. basil leaves
1 tsp. dried oregano
1 tbs. sun-dried tomatoes
1/2 tsp. salt, fresh pepper
to taste

* Directions:

Put all ingredients in a blender and blend until smooth.

Salad

* Ingredients:

1 tomato cut into thick
slices
4 slices unpeeled eggplant
cut into l/2" slices
1 medium red onion cut into
l/2" slices
2 roasted red peppers,
peeled and cut into l"
strips
Lettuce leaves for garnish

* Directions:

Grill onion and eggplant slices, brushing vegetables with a mixture of
water and olive oil before grilling. Arrange vegetables overlapping
one another on lettuce leaves. Top with dressing.
