* Ingredients:

1 lb. uncooked rotini pasta

1 lb. chicken breast, cooked and diced

8 oz. fresh spinach, washed, cleaned and chopped

4 oz. shallots, chopped

4 oz. scallions, chopped

4 oz. fresh tomato, peeled and diced

4 oz. basil, julienned, extra for garnish

Pinch ground black pepper

Juice of half an orange

Juice of one lemon

* Directions:

While the pasta is cooking, heat a skillet and sauté shallots and
garlic in olive oil. Add the spinach and sauté a bit longer.
Finally, add the cooked chicken, tomato, scallions and basil.
Squeeze orange and lemon juice into the mixture and season with the
black pepper. Combine chicken mixture with the cooked pasta and
serve. Garnish with julienned basil, if desired.
