Coconut apple crunch

* Ingredients:

Filling: c. frozen apple juice concentrate

c. nonfat milk

c. dry coconut cream pudding mix

3 c. sliced apples

Topping: c. light margarine

c. whole wheat flour

c. instant oats

2 T. wheat germ

1 t. baking powder

t. cinnamon

t. salt

c. chopped nuts

t. vanilla

1 egg or egg substitute

Remaining pudding mix

* Directions:

Combine cup pudding mix with the milk. Add apple juice and
apples, and pour into an ungreased 8x8-inch baking pan. In a
separate bowl mix all the topping ingredients. Spread over the
apple mixture. Bake at 350F for 35-40 minutes.
