* Ingredients:
3 cups unsweetened pineapple juice
½ cup chopped dates
1 teaspoon vanilla
3 tablespoons arrowroot or cornstarch
3 tablespoons cold water
6 cups apricot halves
3 cups Granola or Grape-Nuts cereal
* Directions:
Process dates with about 1 cup of pineapple juice in a blender
until very smooth. Pour into saucepan and add remaining juice and
vanilla. Bring to a boil. Mix arrowroot and cold water and add to
saucepan. Cook several minutes, stirring constantly, until thick
and clear. Arrange apricots in a 9" x 12" baking dish. Pour sauce
over apricots and top with Granola or Grape-Nuts. Bake at 350ºF for
30 minutes.
Variations: (1) Substitute peach slices for apricot halves.
(2) Substitute peach or pear juice, or apricot nectar, for
pineapple juice.
