* Ingredients:
4 cups chopped fresh tomatoes or mashed canned tomatoes
1 onion, chopped
½ cup chopped green bell pepper
4 ounce can diced green chilies (optional)
¼ cup chopped fresh parsley
2 tablespoons fresh cilantro, or 1 teaspoon dried cilantro
(optional)
1½ tablespoons fresh lemon juice
2 cloves garlic, minced
¼ teaspoon ground cumin
¼ teaspoon ground oregano
salt, to taste (optional)
* Directions:
Combine all ingredients and mix well. Allow to stand, refrigerated,
for a few hours, to let flavors blend. Keep refrigerated in an
airtight container. For variation, add an 8 ounce can of tomato
sauce. Yields 1 quart or 16 servings.
