Chicken With Couscous And Moroccan Vegetable Sauce

Couscous Sauce

* Ingredients:

1/2 tsp. extra virgin olive oil

5 oz. julienned red pepper

5 oz. julienned carrots

5 oz. julienned onions

5 oz. julienned fennel

3/4 tbs. chopped garlic

1/2 tsp. ground cinnamon

1/4 tsp. ground curry

1/8 tsp. kosher salt

2 oz. raisins

1/4 cup red wine

6 oz. turkey gravy (recipe follows)

14 oz. demi-glace (recipe follows)

1 oz. julienned sun-dried tomatoes

* Directions:

Sauté vegetables in olive oil. Add the spices and cook for
approximately three minutes. Add the raisins and wine and reduce by
half. Add the demi-glace and the gravy and simmer for approximately
20 minutes. Add the sun-dried tomatoes and cool.

Marinade for Chicken

* Ingredients:

½ cup non-fat mayonnaise

¼ cup lemon juice

1 oz. cajun hot sauce

½ tsp. cayenne pepper

½ tbs. chili powder

½ cup water

½ tbs. curry powder

6 boneless, skinless chicken breasts (3 oz. each)

* Directions:

Combine all the ingredients except chicken, and chill until ready
to use.

Couscous Pasta

* Ingredients:

1 lb. couscous

1 pint turkey stock, defatted (recipe follows)

½ oz. puree of sun-dried tomatoes and roasted peppers (¼ oz. sun-
dried tomato, ½ roasted pepper)
