2 cups water
1 cup chopped dates
1/2 cup clean, raw cashews or blanched almonds
3 tablespoons cornstarch or arrowroot
1 teaspoon vanilla
1/8 teaspoon salt
1 baked Nutri-Grain Pie Crust
Process all ingredients in a blender, except last two, until very
smooth. Place in a heavy saucepan and cook until thickened,
stirring constantly. Cool in refrigerator. When cool, slice bananas
and layer with cream filling in pie crust. Garnish with fresh
strawberries or toasted coconut, if desired.
Variations: (1) For banana cream parfait, spoon filling into parfait glasses
with alternate layers of sliced banana or granola; (2) layer cream
with other fresh fruits, in a pie or parfait glasses.
