* 2 tbsps sunflower oil
* 1 onion, finely chopped
* 2 cloves garlic, crushed
* 1/2 tsp chilli powder
* 1 tsp ground cumin
* 1 tsp ground coriander
* 6 tbsps crunchy peanut butter
* 120 ml/4 fl oz water
* 1 tsp soy sauce
* 1 tsp lemon juice
Heat the oil in a pan, add the onion and fry until softened. Add the
garlic and spices, stir and cook for 1 minute. Mix in the peanut
butter, then gradually blend in the water, stirring until
thickened. Add the soy sauce and lemon juice and leave to cool.
