Spinach-Stuffed Manicotti

* Ingredients:

14 ounce package firm tofu

10 ounce package frozen chopped spinach,
[../../../images/generic/trapxl.gif]or 1 bunch fresh spinach,
chopped fine

2 cloves garlic, minced

1 tablespoon fresh lemon juice

1 tablespoon food yeast flakes

½ teaspoon salt

6 large manicotti shells, cooked al dente

2 cups spaghetti sauce

* Directions:

Drain tofu well. Mash until it is similar to cottage cheese. Simmer
spinach and garlic in a small amount of water. Do not overcook.
Combine with tofu and seasonings and mix well. Fill manicotti
shells with mixture and place in a baking dish. Pour spaghetti
sauce over top and bake at 350°F until heated through. For
variation, use filling for crepes.
