* Ingredients:

3 cups water

1 cup dried lentils

1 onion, chopped

1 clove garlic, minced

1 teaspoon salt

1 bay leaf

1/8 teaspoon thyme (optional)

3½ cups cooked brown rice

1¾ cups shredded lettuce

1¾ cups diced tomatoes

7 tablespoons chopped green onions

7 tablespoon sliced black olives

* Directions:

Bring first 7 ingredients to a boil, then reduce heat and simmer
for 45 to 60 minutes, or until thickened and lentils are tender.
Remove bay leaf. Place in a serving bowl and place remaining
ingredients in individual serving bowls. Let each person make
their own "haystack."

Suggestions: Top with tomato sauce, guacamole, or fresh lemon juice and garlic
salt.
