* Ingredients:
chicken breasts, 6 oz. each
4 oz. souvlaki marinade (recipe follows)
1 lb. cooled rice (recipe follows)
4 medium red onions, blanched
1 tsp. dried oregano
* Directions:
Cut chicken breasts into approximately 1- inch cubes. Alternate cubes
of chicken and cubes of red onion on a wooden skewer. (Soak the
skewers ahead of time in water so they won't burn on the grill).
Spoon the marinade over each skewer and marinate for a few hours. Char
grill skewers and serve over the rice mixture. Garnish with dried
oregano.
Souvlaki Marinade
* Ingredients:
2 tsp. kosher salt
2 tsp. dried oregano
2 tsp. chopped parsley
2 tsp. freshly cracked black pepper
2 tbs. crushed garlic
1 medium red onion, minced
4 oz. white wine
Juice of one lemon
2 tbs. olive oil
* Directions:
Mix all dry ingredients. Add the liquids and blend together with a
spoon.
Rice
* Ingredients:
1 lb. cooked brown rice (made from 1/
2 lb. dried rice)
4 plum tomatoes, cut into quarters
4 oz. balsamic vinegar
2 cloves peeled garlic
2 sprigs fresh rosemary
2 sprigs fresh thyme
* Directions:
Place all ingredients in a baking dish and bake for 15 minutes at
375°.
