* Ingredients:
1 quart cold water
1 cup coarse cornmeal
¼ cup raisins
1 teaspoon salt
1 teaspoon vanilla
¼ teaspoon coriander or anise (optional)
* Directions:
Stir cornmeal into cold water. Cook over low heat, stirring
frequently, until thickened and smooth. Stir in remaining
ingredients. Pour into a baking dish and bake at 350°F for 45-60
minutes.
Variations: Add ¼ cup chopped nuts and 1 small apple, shredded; or add ¼ cup
unsweetened, flaked coconut.
