4b Starches Recipes: Mushed Sweet Potatoes

Peel one huge sweet potato and cut into 1 inch chunks. Microwave five
minutes with half a cup of water. Stick it with a fork. If it's not
soft yet, repeat with additional two minute intervals in the
microwave. When it's soft, mush in the processor and freeze as for the
peas.
